A talented young chef has shared how to make a delicious and decadent chocolate Swiss roll from home. 

Melbourne bakery owner, Morgan Hipworth, revealed his recipe on TikTok which has since received more than 204,000 views. 

To create the dessert, he first added six egg yolks into a bowl with 200 grams of caster sugar and beat the ingredients together with a whisk attachment until fluffy.

He simply whipped together a chocolate cake batter and baked in the oven for 15 minutes

He then added 90 grams of cake flour, six grams of baking soda, 30 grams of cocoa powder and one teaspoon of vanilla extract into the bowl.

Morgan slowly whisked the ingredients together while he added in 90 grams of melted butter and continued whipping the mixture until smooth. 

In a separate bowl he whipped six egg whites and caster sugar together until stiff peaks formed, then spooned it into the batter and folded to combine the mixture. 

He transferred the mixture onto a tray lined with baking paper and baked the batter on 170 degrees for 15 minutes. 

Once baked, Morgan removed the cake from the oven and spread a sheet of baking paper out onto the bench before dusting it with cocoa powder. 

He laid the cake out and gently rolled it up with the paper in between each fold, then placed it into the fridge to cool.

How to make Morgan’s swiss roll:

Ingredients: 

Cake: 

  • 6 Egg yolks, whites separated 
  • 200g Caster sugar
  • 90g Cake flour 
  • 30g Cocoa powder, sifted
  • 6g Baking powder, sifted
  • 1tsp Vanilla extract
  • 90g Butter, melted 

Filling:

  • 300mL Cream 
  • 1 Vanilla bean
  • 2tbsp Caster sugar 

Glaze: 

  • 200g Cream 
  • 200g Chocolate 
  • 1tbsp Liquid glucose  

Method: 

  • Add six egg yolks into a bowl with 200 grams of caster sugar and beat the ingredients together with a whisk attachment until fluffy.
  • Add 90 grams of cake flour, six grams of baking soda, 30 grams of cocoa powder and one teaspoon of vanilla extract into the bowl.
  • Whisk the ingredients slowly together then add in 90 grams of melted butter and continue whipping the mixture until smooth.
  • Whip together six egg whites and caster sugar until stiff peaks form.
  • Spoon the whipped mixture into the chocolate batter and folded to combine.
  • Transfer the mixture onto a tray lined with baking paper and baked the cake on 170 degrees for 15 minutes.
  • Remove the cake from the oven and spread a sheet of baking paper onto the bench before dusting it with cocoa powder. 
  • Lay the cake out onto the paper and gently roll it up with the paper in between each fold, then place it into the fridge to cool.
  • Unwrap the cool sponge and spread on a filling, then roll the cake without the paper and transfer it onto a wire rack before coating it in a chocolate glaze.
  • Place the freshly glazed swiss roll in the fridge to set, then cut it up into slices to serve and enjoy.

Morgan unwrapped the cooled sponge and spread on a filling made with 300mL of cream, the seeds of one vanilla bean and two tablespoons of sugar. 

He rolled the cake without the paper and transferred it onto a wire rack before coating it in a glaze made from 200 grams of cream, 200 grams of chocolate and one tablespoon of liquid glucose.  

Morgan placed the freshly glazed swiss roll into the fridge to set, then cut it up into slices to serve and enjoy.

He posted the impressive dessert to TikTok where hundreds of foodies have since commented on how tasty the homemade treat looks.
