An amateur chef has shared her simple recipe for creamy peanut noodles that only takes 10 minutes to make. 

Sydney foodie, Ayeh Manfre, known online as Cooking With Ayeh, says the noodle dish is one of her favourite easy weeknight dinners. 

To make the dish Ayeh added four tablespoons of peanut butter, two tablespoons of soy sauce and maple syrup and one tablespoon of rice wine vinegar into a bowl.

Sydney foodie, Ayeh Manfre, has shared her simple recipe for creamy peanut noodles that only take 10 minutes to make and she says the dish is one of her favourite dinners to have

She then grated fresh garlic and ginger directly into the sauce mixture, as well as a dash of sesame oil and water. 

Ayeh whisked the sauce together until it turned a creamy consistency and then cooked her rice noodles. 

She then added garlic, tofu, bok choy and thinly sliced green cabbage into a hot pan and cooked the vegetables until they were ready.

How to make Ayeh’s creamy peanut noodles:

Ingredients: 

  • 4tbsp Peanut butter
  • 2tbsp Soy sauce
  • 2tbsp Maple syrup
  • 1tbsp Rice wine vinegar
  • Garlic, grated 
  • Ginger, grated
  • Sesame oil 
  • Water 
  • Rice noodles
  • Tofu, crumbled 
  • Bok choy, chopped
  • Green cabbage, thinly sliced 
  • Crushed peanuts, to serve 

Method: 

  1. Add four tablespoons of peanut butter, two tablespoons of soy sauce and maple syrup and one tablespoon of rice wine vinegar into a bowl.
  2.  Grate fresh garlic and ginger directly into the sauce mixture then add a dash of sesame oil and water into the bowl.
  3.  Whisk the sauce together until it is a creamy consistency then cook rice noodles.
  4. Add garlic into a hot pan with oil then add tofu, bok choy and thinly sliced green cabbage into it until cooked.
  5. Add the cooked rice noodles and pour the creamy peanut sauce into the pan with the vegetables.
  6.  Stir all of the ingredients together in the pan and then dished the noodles up in a bowl.
  7.  Serve the noodles with crushed peanuts on top to enjoy.
